Ok so I have been bad lately and have not been cooking much. BUT that means I need quicker meals that I can take with me to classes and thus the smoothie trend has kicked back up at my house.
I don’t want to overwhelm you all with 15 smoothie recipes, so I’ve just picked three of my favorites that I always have the ingredients for on hand. They’re all super easy to make and perfect for anyone on-the-go.
*Quick warning* I never measure anything when making smoothies so just guess and adjust as you go! I like my smoothies to be on the thicker side, so if you like thin smoothies, just add more liquids.
This is like going on a vacation as soon as you take a drink. I tend to just throw stuff into the blender and pray that it turns out halfway decent and this one was a home run
on the first try! All you need is:
2 handfulls frozen strawberries
Juice of half a lime
3-4 splashes orange juice
Blend everything together and I like to top mine with either a lime wedge, coconut flakes or orange slices.
I have a love-hate (mostly hate) relationship with green smoothies of any kind. I don’t know why because I love just about every green vegetable out there… I guess having to drink them is the turnoff. I finally found one that works for me though, and it’s super easy:
2 handfuls spinach
Juice of one lime
Coconut milk (or sub any nut-milk)
3 spoon fulls of non-dairy yogurt
Handful of green grapes (not necessary, but add some sweetness)
I will warn you about this one, it is sour! It’s not your typical green smoothie and I think that’s why I like it. If that’s not up your alley, just add some grapes or even some agave nectar and frozen bananas to sweeten it up some. I topped this one with coconut flakes, and it was perfect.
Haven’t you always wanted to drink a cinnamon roll? No? Ok, me either but I did and WOW! This smoothie was the result of being hungry and attacked by my sweet-tooth at 2:00 a.m. and not wanting to cook. It turned out to be sooooo good I couldn’t keep it to myself:
3 pitted medjool dates (soak in warm water for 10 minutes to soften)
1 frozen banana
Small hand full of rolled oats
Sprinkle of cinnamon
Splash of pure vanilla extract
Blend it all up and you’ve got a classic pastry in a jar. I like to make mine look fancy by putting some cinnamon sticks in there too, but that’s just how I am these days… a plain straw works too.
