Story time! My grandma got me a veggie spiraling tool for Christmas and I had yet to even open the package until today. I wanted Italian food but I also didn’t want a heavy meal either. Solution? Zoodles.
I’ve had them before but I had never attempted them on my own and now I don’t know why I was so scared of them. This was honestly easier than boiling water and making sure regular noodles don’t stick to the pot.
I sent a picture of the final project to my friend who immediately informed me that I must post this recipe, so here we are. I made this up completely on the fly and it turned out to be pretty close to perfection.

Do you guys know how long it has been since I’ve posted a recipe on here?!? Way too long. But not as long as it’s been since I’ve eaten a marshmallow. I finally found a brand of vegan marshmallows carried by Thrive Market (link). I opened my box of goodies and immediately began thinking of what I could do with them.

Every American girl needs a Dutch best friend. Why? So you can turn her smoothie recipes into cookies. My friend Denise runs a blog often featuring Amy as well as some of the best smoothie recipes I’ve ever tried. Earlier this week, she texted me this:
You guys. I am so excited about this cake. I haven’t had strawberry cake in so long it’s crazy. My family has this strawberry angel food cake we always have for my mom’s birthday but it’s not vegan or gluten free, so I had to get creative and this was the result. I’m not going to lie to you, I liked it better than than the other.
What’s the best thing about being vegan? Well, besides the whole animal rights thing and environmental impacts I’m going to have to go with YOU CAN EAT ANY KIND OF BATTER YOU MAKE AND NOT WORRY ABOUT GETTING SALMONELLA!!!

Ok, so I wasn’t planning on sharing this recipe (that I totally made up on the spot because I didn’t have blueberries to make the smoothie I wanted UGGGHHH) but it turned out really well so… why not??
I’m actually not sure if I should call this a smoothie or ice cream… or as we vegans like to call it nice cream. The base is Coconut Bliss Vanilla Island, so it’s more of a shake but whatever. Smoothie bowl.
